Service Description

Koji is the building block of miso, sake and soy sauce. However, it is also an amazing flavor promoter for curing and barbecuing. In this Food Experience, learn how to make Amazake and Shio Koji to break down long proteins chains into shorter more tender strands. Plus, marinating with Koji promotes the maillard effect, creating beautiful caramelization when cooked. A farm tour is also included in the event, with tiki beverages available for separate purchase.
