Service Description

Brining techniques can be used in a wide array of cooking styles. It's great for BBQ, but it can also be used for cooking seafood, vegetables and adding layers of flavor to your favorite recipes. Methods of brining also vary widely. Learn the ratios and reasons why brining makes food flavorful and juicy. However, brines can use a wide array of liquids other than water. See how Koji (the building block of miso, sake and soy sauce) can be used to ramp up your brining and flavor to another level. Also, learn how certain braising techniques can further enhance flavor development in cooking. Then, settle in for a 6 course chef curated tasting menu utilizing the techniques discussed! A farm tour is also included in the event, with tiki beverages available for separate purchase. Deposits are non-refundable unless provider cancels or re-schedules the event. In order to prepare the proper amount of food, we close bookings three days before the event. For inquiries about late bookings call or text 504-338-2986 - we often can add several people to the event if we have enough food. Allegris & Substitutions: Please let us know if you have any food allergies or if you would like vegan/vegetarian/pescatarian substitutions no later than 7 days before the event. Please text such requests to 504-338-2986. Cancellations: Provider reserves the right to cancel or reschedule the event due to weather or other uncontrollable issues. Deposits are non-refundable, but if you need to cancel prior to 7 days before the event, we will give you a credit in the amount paid toward another event. Cancellations within 7 days of the event are non-refundable and will not receive a credit because we order food 7 days out! Thanks for your understanding!
