    The Tiki Farm is about unique experiences & learning. Book your private event! Call or text Chef Ernie at 504-338-2986 to discuss options (we don't have automatic availability on the calendar, but are happy to discuss dates & times!). Whether you want a romantic dinner/food class for two or a fabulous & unique private party for a group, we can tailor create your event. Options include, farm tour, chef curated tasting menu, classes on fermentation basics, miso making, kosho making, gochujang making, soy sauce making, tofuru making, tempeh making, brining/braising techniques, using koji/shio koji/amazaki, and more! We can even add-on a sunset boat cruise for up to 3 people and an over night stay in our UFO for 2.

  • Making Molasses & Fermented Beverages!!

    We grow sugar cane and make molasses each fall. We grow grapes and make wine & vinegar, which we use for cooking the weekly changing menu at Suis Generis. Learn how easy it is to grow sugar cane, make molasses, and delicious pro-biotic rich fermented beverages. Then join us for a chef curated 6 course tasting menu featuring some of our delicious molasses and fermented goodies.   • Fermentation Orchestra Food Pairing!

    Join us for what may be the most unusual food & music pairing around - a journey through a soundscape of exotic music & live fermented foods. We use fermentation to transform flavors and preserve ingredients. What you may not know is, they are living cultures with something to say! Carlos Grasso (Pink Teddy Bear & Friday Night DJ at Suis Generis) will perform a special musical dinner set with microphones attached to fermented foods, plants, prep tables and sautée pans. After all, we have ears to feed! Executive Chef & Food Scientist, Ernie Foundas will cook a 6 course dinner from which Carlos will create a custom soundscape paired with, and performed during each course.   • Tiki Pig Roast & Fishing Rodeo!

    For years, we hosted a Suis Generis Grand Isle Surf Fishing Rodeo. Now, we are super-excited to host our first Tiki Pig Roast & Primitive Watercraft Fishing Rodeo!! What does that mean? Participants can fish from shore and/or from any non-powered watercraft (ie: no motors). Bring a kayak, perow, canoe, innertube or build an outrigger! Winning categories are: largest fish; most fish by weight; and strangest catch! Winners will receive $100 gift certificates redeemable at Suis Generis or the Tiki Food Lab. Fishing is from 10:00AM - 5:00 PM! We will also have some kayaks available for use by participants. Bring your own fishing equipment and bait. We can offer pointers and positive encouragement!!! Entry is $35, which includes food, water & iced tea. Other beverages and tips are extra. Food will include a whole roast cochon-de-lait, plenty of veggie/vegan options & hopefully some fish that we catch (assuming y'aal don't totally suck at fishing!)   • Miso Making Made Easy & Amino Ferments

    This Food Experience includes a farm tour to see how the Tiki Farm and Food Lab integrate with the ever changing Suis Generis menu. Then, learn how to make miso from scratch at home using interesting and unusual ingredients. See how fermentation can be used to minimize food waste and transform flavors. After you learn how to make miso - settle in for an 8 course chef curated tasting menu featuring some of our house made misos! Tiki beverages available for separate purchase.     The fog rolls off the bayou as you join us for an evening of mystic delight! Each of the six courses of this menu will be inspired by a tarot card, and the energy behind it. The SG Tiki Farm experiments with unusual teas and tinctures which will be incorporated into the dishes, and intertwined with this journey of mystical food & natural energies! Learn about mysticism, tarot cards, and how to achieve healthy mind-body balance with food, scents, sounds & positive energy. The dessert course will include a tea-leaf reading for each guest! This Food Experience includes a 6 course menu drawing inspiration from the food-medicinal history of indigenous Peruvian cultures. After a tour of the SG Tiki Farm, settle in for the exotic sounds and flavors of Peru, and your 6 course meal overlooking the beautiful bayou, featuring items from the farm, and fabulous pro-biotic fermented goodies.
