We can even add-on a sunset boat cruise for up to 3 people and an over night stay in our UFO for 2.

Science plays a part in the discovery of umami, but don't be scared - these techniques can be used in your home or in top restaurants.   • The Sound of Flavor - Sonic Tasting!

    Join us for what may be the most unusual food & music pairing around - a journey through a soundscape of exotic music & live fermented foods. We use fermentation to transform flavors and preserve ingredients. What you may not know is, they are living cultures with something to say! Plants and food ingredients also want to be part of the band, and with the sounds of the farm as the backdrop soundscape - this is an experience not to miss! Carlos Grasso (Pink Teddy Bear & Friday Night DJ at Suis Generis) will perform a special musical dinner set with microphones attached to fermented foods, plants, prep tables and sautée pans. After all, we have ears to feed! Executive Chef & Food Scientist, Ernie Foundas will cook a 6 course dinner from which Carlos will create a custom soundscape paired with, and performed during each course.     This Food Experience includes a farm tour to see how the Tiki Farm and Food Lab integrate with the ever changing Suis Generis menu. Then, learn how to make miso from scratch at home using interesting and unusual ingredients. See how fermentation can be used to minimize food waste and transform flavors. Learn the difference between lacto & amino ferments. After you learn how to make miso - settle in for an 8 course chef curated tasting menu featuring some of our house made misos!   • Grounding - A Day In The Dirt!

    This is not your usual Food Experience - it's a full day helping and learning at the farm. The theory of Grounding is that the earth has a negative electrical charge, and direct contact allows the body to absorb electrons, which are thought to have antioxidant effects and reduce inflammation. We have not conducted a scientific study on Grounding, but we definitely believe there are direct emotional and physical benefits of working the soil! Help us plant trees, weed vegetable beds, and learn how we grow and cultivate plants at the SG Tiki Farm. Prepare to get dirty - then join us for a fabulous BBQ using pro-biotic rich ingredients, amazake brining techniques, and more! Also, learn about zero waste cooking which strives to minimize waste. There are many ways to use what we traditionally think of as food scraps to make delicious dishes. Plus we will discuss composting techniques so you can make fertilizer out of whatever is left!   • Buggy Business w/ Zack Lemann

    This Food Experience includes a farm tour, 6 course dinner, and interesting information about the culture of eating bugs around the world. There are many ways to use what we traditionally think of as nuisance species to make delicious dishes. It takes about 1.5 acres of pasture to support one cow. Do you know how much space is needed to support edible bugs? Plus, they are tastier than you think. Learn how to cook with bugs and make your fire ants nervous in the process! This Experience includes a special bug-forward farm tour so you can see how we manage insects and incorporate ingredients from the farm into the weekly changing menu at Suis Generis.     Brining techniques can be used in a wide array of cooking styles. It's great for BBQ, but it can also be used for cooking seafood, vegetables and adding layers of flavor to your favorite recipes. Methods of brining also vary widely. Learn the ratios and reasons why brining makes food flavorful and juicy. However, brines can use a wide array of liquids other than water. See how Koji (the building block of miso, sake and soy sauce) can be used to ramp up your brining and flavor to another level.
