    Join us for what may be the most unusual food & music pairing around - a journey through a soundscape of exotic music & live fermented foods. We use fermentation to transform flavors and preserve ingredients. What you may not know is, they are living cultures with something to say! Plants and food ingredients also want to be part of the band, and with the sounds of the farm as the backdrop soundscape - this is an experience not to miss! Carlos Grasso (Pink Teddy Bear & Friday Night DJ at Suis Generis) will perform a special musical dinner set with microphones attached to fermented foods, plants, prep tables and sautée pans. After all, we have ears to feed! Executive Chef & Food Scientist, Ernie Foundas will cook a 6 course dinner from which Carlos will create a custom soundscape paired with, and performed during each course.   • Tiki Boucherie w/ David Barbeau

    This event is also affectionately known as the Beatrix-Boucherie since it is also the birthday of David's daughter Beatrix! in If you know Chef David and Chef Ernie, you know they love to play with fire! From fire comes smoke, and salt brings the whole thing together. This is a true boucherie where you can learn how to butcher a whole pig and see how Ernie and David employ various techniques to cook the whole thing. It is a full day open house, be there at noon for the butchery demonstration, see the cooking and preparation process from 1-4, jump on a kayak to tour the bayou, and enjoy dinner around 5:00 pm.     Your Food Experience includes a farm tour to see how the Tiki Farm and Food Lab integrate with the ever changing Suis Generis menu. In this food experience, you will learn how to make various types of cheeses using koji and fig branches as rennet to separate cream. A really fun and interesting evening of cheesy goodness! Then settle in for a 6 course chef curated tasting menu featuring some of our house made koji-based and fig rennet cheeses!   • Tiki Farm Fishing Rodeo & BBQ!!

    For years, we hosted a Suis Generis Grand Isle Surf Fishing Rodeo. Now, we are super-excited to host our second Tiki Farm Primitive Watercraft Fishing Rodeo & Tiki Farm Fest!! What does that mean? Participants can fish from shore and/or from any non-powered watercraft (ie: no motors). Bring a kayak, pirogue, canoe, innertube or build an outrigger! Winning categories are: largest fish; most fish by weight; and strangest catch! Winners will receive $100 gift certificates redeemable at Suis Generis or the Tiki Food Lab. Fishing is from 11:00AM - 5:00 PM! We will also have some kayaks available for use by participants. Bring your own fishing equipment and bait. We can offer pointers and positive encouragement!!! Entry is $35, which includes food, water & iced tea. Other beverages and tips are extra. Music will be by Bane & The Gators. Food will include barbecued goodies, veggie/vegan options & hopefully some fish that we catch (assuming y'aal don't totally suck at fishing!)   • Make Hot Sauce & Gochujang - Learn How!

    This Food Experience and 8 course chef tasting dinner will wake up the your taste buds!!!! Koji is the building block of miso, sake and soy sauce. However, it's also an amazing flavor promoter for cooking, curing and fermenting a wide range of ingredients - and in particular for making hot sauces. In this Food Experience, learn how to make fermented hot sauces including Gochujang and to use amino ferments to break down long proteins chains into shorter more tender strands. Plus, marinating with Koji-based hot sauces promotes the maillard effect, creating beautiful caramelization when cooked.     This Food Experience includes a farm tour, 6 course wild mushroom chef tasting dinner, and interesting information about mushrooms found on the Gulf coast. We are super excited for this collaboration with Scott Johnson, who is the vice president of the Gulf Coast Mycological Society. Learn tips and tricks for identifying and distinguishing mushrooms, where to find them, and see how Chef Ernie uses fermented mushrooms to accentuate umami. This Experience includes a farm tour so you can see how we use spent mushroom blocks in composting and incorporate ingredients from the farm into the weekly changing menu at Suis Generis.
