Service Description
This Food Experience and 6 course chef tasting dinner will wake up the umami in your cooking!!!! Koji is the building block of miso, sake and soy sauce. However, it's also an amazing flavor promoter for cooking, curing and fermenting a wide range of ingredients. In this Food Experience, learn how to make Amazake, Shio Koji, and to use amino ferments to break down long proteins chains into shorter more tender strands. Plus, marinating with Koji promotes the maillard effect, creating beautiful caramelization when cooked. A farm tour is also included in the event, with tiki beverages available for separate purchase.
